How to Make Tasty Vegan Pancakes

We share our delicious plant-based pancake recipe. A great treat for the whole family.

Eating plant-based does not mean missing out on treats. And pancakes are a super simple way to treat yourself or have fun with the kids. We're sharing our easy plant-based pancake recipe for Shrove Tuesday, or any time of the year.

Ingredients

  • 220g plain white flour
  • 1/2 teaspoon salt
  • 500ml plant-based milk (hazelnut, soya or almond all work well)
  • 5 tablespoons vegetable oil

Ingredients

Put the salt into a large mixing bowl. Sieve the flour in with the salt (you don't have to sieve it but I find it helps with reducing lumps) and mix together.

Make a 'well' in the middle of the flour and slowly pour the your chosen plant-based milk on top.

Whisk together as you go. The more care you take at this stage, the less lumps you'll have!

Add the oil and whisk all together until you get a smooth mix. If you have a hand blender and are concerned about lumps you can always use this.

Heat a small-medium size frying pan. If you have a good, non-stick one, you shouldn't need additional oil.

Once the pan is hot, pour a couple of big spoonfuls of your pancake mix into the middle of the pan, then 'swirl' the pan round until the mix coats the bottom of the pan in a big circle.

You may be tempted to move it, but the key is to leave it for around a minute (depending on thickness) for the gooiness to cook through. Often you can by sight, or by giving the pan a little shake. If the pancake moves, the bottom is cooked.

It's now time to flip it over and cook the other side. This is likely to take even less time so take care to watch it and don't let it burn.

Just a warning - my first pancake is always rubbish! Unless you make them regularly it takes the first one to learn how much mix to use and when to flip it.

Once you get the first one out of the way the rest are likely to be much better (plus you get to eat the messy one while you're cooking the others!)

Repeat the process until all the mix is used up.

Once all your pancakes are cooked it's time to fill them! This bit is great fun as you can personalise your pancakes or get the kids involved.
